Quick and Easy Meals in Minutes: Pork & Mash Gratin

Now that Autumn is well and truly here, this quick and easy recipe is just the thing to warm you from the inside out! Delicious and nutritious, it is a meal you can easily make even when you are tight on time.

COOKING TIME: 30 MINS

INGREDIENTS
• 800 g potatoes
• 400 g pork fillet
• 40 g cheese (Cheddar is best)
• 4 slices prosciutto
• 2 sprigs of fresh sage

METHOD

Preheat the grill to high. Wash the potatoes and roughly chop them into small pieces, add to a boiling pan of salted water and cook for 12 mins. Meanwhile, place a casserole pan on a high heat. Season the pork with sea salt and black pepper, then place in the pan adding 1 tablespoon of olive oil. Sear for 3 minutes then remove onto a plate. Add the sage leaves into the fat in the pan for 5 seconds, then scoop them onto a plate. Keep the fat in the pan to use later.

Then drain the potatoes, and add to the casserole pan. Grate in half the cheese, and add 1 tablespoon of extra virgin olive oil. Mash well and season to taste. Smooth the mash to the edge of the dish then grate in the remaining cheese, and sit the pork on top. Gratinate under the grill for 10 minutes. Lay the prosciutto around the pork in waves, sprinkle over the crisped sage, then grill for 2 more minutes. Allow to rest for 2 minutes, then slice the pork and dish up.
